Food For Thought | Chellie’s Chicken Salad

It’s summer and BBQ season! Time for comfy dresses or shorts with a little give so you can smash on all the deliciousness a good grill sesh with friends or family has to offer. I wanted to share one of my favorite summer recipes that can be a side or a main dish: chicken salad.

Chellie’s Chicken Salad Prep time 30 minutes, total time and one hour. Serves eight

Ingredients:

  1. Four cups of shredded chicken — I use pre cooked shredded chicken from Archer Farms at Super Target. You could also cook and season your own, but I’m usually making this about an hour before I need to leave so time is of the essence here.
  2. One cup of red grapes, halved
  3. One 6 oz bag of sliced almonds
  4. Three celery ribs, chopped
  5. Three scallions, thinly sliced
  6. Two tablespoon of fresh dill, chopped
  7. One cup of mayonnaise
  8. Juice of one lemon
  9. Salt and fresh ground black pepper to taste

Directions:

  1. In a large mixing bowl, combine chicken, grapes, almonds, scallions and dill.
  2. In a small mixing bowl combine mayonnaise, lemon juice, salt and pepper.
  3. Pour the dressing mixture over your dry ingredients and mix together.
  4. For best results, refrigerate at least 30 minutes before serving.
  5. Serve as a side or on a croissant for a delicious summer sandwich.
