Food For Thought | Chellie’s Chicken Salad
It’s summer and BBQ season! Time for comfy dresses or shorts with a little give so you can smash on all the deliciousness a good grill sesh with friends or family has to offer. I wanted to share one of my favorite summer recipes that can be a side or a main dish: chicken salad.
Chellie’s Chicken Salad Prep time 30 minutes, total time and one hour. Serves eight
Ingredients:
- Four cups of shredded chicken — I use pre cooked shredded chicken from Archer Farms at Super Target. You could also cook and season your own, but I’m usually making this about an hour before I need to leave so time is of the essence here.
- One cup of red grapes, halved
- One 6 oz bag of sliced almonds
- Three celery ribs, chopped
- Three scallions, thinly sliced
- Two tablespoon of fresh dill, chopped
- One cup of mayonnaise
- Juice of one lemon
- Salt and fresh ground black pepper to taste
Directions:
- In a large mixing bowl, combine chicken, grapes, almonds, scallions and dill.
- In a small mixing bowl combine mayonnaise, lemon juice, salt and pepper.
- Pour the dressing mixture over your dry ingredients and mix together.
- For best results, refrigerate at least 30 minutes before serving.
- Serve as a side or on a croissant for a delicious summer sandwich.
