Stories from Quarantine | Quarant-eats Part I
A whopping four people on IG said they wanted this, and one was a bot. But that’s enough for me. I’m going to start sharing my Quarant-eats! Today’s recipe is for a yummy, healthy, and filling breakfast that’s suuuuuuuuuper easy to make! It’s my egg-avocado toast!
Ingredients:
- One slice of your favorite bread–I’ve been using multi-grain
- Two eggs per serving
- Your favorite cheese, shredded or sliced
- Half an avocado
- Salt
- Pepper
- Trader Joe’s Everything But the Bagel seasoning
Optional:
- A splash of milk
- Sliced tomatoes
- Sriracha, Choula or your favorite sauce to put on eggs.
Recipe:
- Pop your bread into the toaster and toast to your desired toasty-ness.
- In a small bowl, whisk two eggs with a splash of milk (optional) and salt and pepper to taste. I like my eggs on the fluffy side so that’s why I add the milk but it’s definitely still good with just eggs, salt and pepper.
- Pour your eggs into a greased (however you like) skillet over medium heat and cook omelet style.
- When the eggs are just about done, add cheese, melt, and fold your eggs.
- Slide your eggs onto your toasted bread.
- Add sliced avocado, tomato (if desired), everything seasoning, and sauce (if desired).
- Enjoy!
Obviously you can make your eggs how you like them! I make mine omelet style because they’re easiest to work with. But If you can make an over easy egg or a poached egg without breaking it, DO IT!
